Lemon Filling Recipe

Ingredients:

  • 3/4 cup sugar
  • 2 tablespoons cornstarch
  • dash of salt
  • 3/4 cup cold water
  • 1 slightly beaten egg yolk
  • 3 tablespoons lemon juice
  • 1 teaspoon grated lemon peel
  • 1 tablespoon butter or margarine

Instructions:

  1. In a saucepan mix sugar, cornstarch, and a dash of salt. Then add water, egg yolk and lemon juice; cook over medium heat 'til thick, stirring constantly.

  2. Remove from heat.

  3. Add lemon peel and butter.

  4. Let cool.

This Lemon Filling Recipe makes 1 1/4 cups of filling.
