Lemon Filling Recipe
Ingredients:
- 3/4 cup sugar
- 2 tablespoons cornstarch
- dash of salt
- 3/4 cup cold water
- 1 slightly beaten egg yolk
- 3 tablespoons lemon juice
- 1 teaspoon grated lemon peel
- 1 tablespoon butter or margarine
Instructions:
- In a saucepan mix sugar, cornstarch, and a dash of salt. Then add water, egg yolk and lemon juice; cook over medium heat 'til thick, stirring constantly.
- Remove from heat.
- Add lemon peel and butter.
- Let cool.
This Lemon Filling Recipe makes 1 1/4 cups of filling.
