Coconut Filling Recipe

Ingredients:

  • 1 6-ounce can evaporated milk
  • 2/3 cup sugar
  • 1/4 cup butter or margarine
  • 1 slightly beaten egg
  • dash of salt
  • 1 teaspoon vanilla
  • 1 3 1/2-ounce can flaked coconut
  • 1/2 cup chopped pecans

Instructions:

  1. In a saucepan combine milk, sugar, butter, egg and salt. Cook and stir over medium heat til mixture thickens and begins to boil, 12 - 15 minutes.

  2. Remove from heat, add vanilla, coconut, and pecans.

  3. Let cool thoroughly.
